Summer Salad Recipes

Last Tuesday I arranged with my sister a day of inspiration! It was about time! So, we started our stroll in London quite early in the morning, which is very rare for us and headed to Somerset House for the Pick Me Up Festival. To be honest, I am not the biggest fan of these kind of festivals-with a bit of art-school vibe- but this one having the credentials of Somerset House kept a more mature creative profile. With graphic artists, design galleries and publishers basically recreating their work environment by hosting workshops and activities for the visitors, the Embankment Galleries turned into an endless field of fun!
What gave me the inspiration for this post? With the weather turning springy after that loooong winter the Spllit Watermelon by Mark Ward just stole my heart!! Not only it put me in the mood but it turned back time…. to that childhood summery memory when I was scoffing careless into a water melon slice…. the smell, the cooling taste, the feeling…
So, I thought why not combine a part of my Greek culture and a part of my childhood memories to create something visually enticing and tasteful at the same time. And here it is! Summer Watermelon Salad Recipe with Prawn and Feta! Easy, summery and believe me although at first sight these ingredients don’t match together you will love the combination of feta’s tanginess and water melon’s sweetness…Genius!
You will need:
Prawns (tiger or king, it’s up to you)
To marinade the prawns:
A bit of olive oil (depending how many prawns you’re making, but keep in mind you don’t want it to be too oily)
Juice from one orange
Juice from one lime
1/2 tablespoon grated ginger
1/2 tablespoon grated garlic
Mix the ingredients for the marinade in a bowl and add the prawns. Leave them in the fridge for at least an hour (the more the better). Skewer the prawns and grill them for about 10 minutes. In the meantime cut the watermelon in cubes and crumble the feta on top. Once you place the hot prawns on top the cheese will melt, adding to the texture.
